Brick Oven Bus is a family-owned wood-fire pizza company born and raised in Minnesota, built out of a converted short school bus in the driveway of an Eagan, MN home. What started as one bus has grown into a fleet of six wood-fire pizza trucks serving multiple Twin Cities locations for lunch and dinner. The dough is never frozen, made fresh by hand and naturally leavened with a wild yeast starter cultured from Minnesota-grown grapes; the sauce is made from San Marzano tomatoes imported from Naples, Italy. Available for public pop-ups (breweries, retail stops, farmers markets) as well as private catering for weddings, graduation parties, corporate lunches, and grand openings.
